Title: Kahlua Chocolate Cheesecake

3/4cGraham cracker crumbs (about 9 Squares)
1tsBrown sugar
1 1/2tbMelted butter or margarine
2/3cCocoa
1cWhite sugar
1/2cFirmly packed brown sugar
2tbCornstarch
15ozPart skim ricotta cheese
16oz1% low-fat cottage cheese
3/4cEgg beaters or 3 eggs
1cLight sour cream
1tsVanilla extract
1/4cKahlua or other coffee; liqueur
  Strawberries; (optional)

1) Preheat oven to 350~. In a small bowl mix the graham cracker crumbs, the 1 teaspoon of brown sugar and the melted butter or margarine until blended. Press firmly into the bottom of a 10 inch springform pan. Bake for 10 minutes, then set aside and let cool. Turn oven down to 325 degrees.

2) Whir the ricotta and cottage cheese in a blender or food processor, adding small amounts at a time, until smooth.

3) In a large, separate bowl, blend Egg Beaters with cocoa, both sugars, and cornstarch. Add the cheese mixture to the egg/cocoa mixture, together with the sour cream, vanilla and Kahlua. Blend well.

4) Pour over the baked crust.

5) Bake for 1 hour and 15 minutes, or until cake sets in the middle. Let cool in oven with door slightly ajar for about 2 hours.

6) Chill for at least four hours. Release sides of pan and garnish with fresh strawberries if desired.

12 servings.

Per serving (including the strawberries) & (using Egg Beaters) 9g. fat, 287 calories, 24 mg. cholesterol, 2g. dietary fiber, 277 mg. sodium.

Most versions of cheesecake contain about 24 grams of fat per serving which is almost half the recommended amount of daily fat for women (50g.) and for men its no more than 60g per day. With this version only being 9g. of fat per serving you're not over- doing the daily intake of fat, providing that the rest of your meals are not to high in fat either.
